Vinification
To accentuate the wine’s fruit aromas, the juice is left to macerate on the grape skins for a few hours before pressing. The juice is clarified through sedimentation before it ferments in large oak barrels. After the first racking, the Barthenau Vigna S. Michele matures on its fine lees in large oak barrels for 15 months during and stirred once a week (bâttonage). The wine matures for a further 6 months in bottle before release.
Barthenau Farmstead
The grapes used to make this wine are grown at the Barthenau farmstead at an elevation of 450 m.a.s.l. (1,476 ft). The vineyard is located on a gentle slope where both exposure to sunlight and air circulation are ideal, resulting in perfectly ripe and healthy grapes. The alternation between warm days and cool nights accounts for the firm backbone of fruity acidity and consequently excellent ageing potential in the finished wine
