The "Classico Hofstätter" sparkling wine is produced according to the traditional method that has been used in Champagne for almost 3 centuries: a second fermentation takes place in the bottle followed by long maturation on the yeast for at least 24 months. Once the maturation period on the yeast is deemed sufficient, the bottles are placed in a "riddling" or "remuage" rack where, over a period of six weeks, they are riddled daily and gradually tipped until they are vertical and the spent yeasts have settled onto the bottle neck. The necks of the bottles are then frozen and the plugs of ice containing the sediment are removed in a process called "degorgement". A special "liqueur d’ expedition" unique to Hofstätter is then added and the bottles are quickly corked.
